Savoury Recipes
Some of these recipes may seem rather long when looking at the ingredients, but most of it is what you have in the kitchen anyway (Esp if you’re desi), feel free to add and subtract things, on the whim additions usually turn out best
Spicy Cheese and Tomato - Pasta/Spaghetti
Ingredients:
500g spaghetti / patsa (I prefer spaghetti if mixing, and pasta when layering)
2 Chicken Breasts
2 Veg stock cubes (the halal chicken ones are better though)
4 fresh tomatoes and half to three quarters of a plump tomato tin (You need both, or substitute either way if you don’t have one or the other)
Cheese (to your hearts content)
2 medium Onions
1 tin -Sweetcorn
1 Green pepper
1tsp ginger
1.5 tsp garlic
3 tbsps - olive oil (or any other co0king oil)
Spices:
1 tsp -Tumeric (haldi)
1 tsp - Cumin powder
1 tsp - Corriander powder
Black pepper (add to tast)
1 tsp - red chilli (add subtract to hotness required)
1 / 1.5 - tsp salt
3 tsps - oregano (and any other herbs that catch your fancy, just make sure they arn’t too strong!)
Method:
- Put pasta / spaghetti to boil
- Cut chicken breast in to pieces and cook with salt and tumeric (add a minute bit of oil if sticking)
- Saute onions in about 3 tbsps of olive oil, add more if required.
- Before oniions are fully sauted add garlic and ginger.
- leave to cook for a bit.
- Add chicken.
- Add all spices and herbs.
- Add chicken, peppers and sweetcorn.
- Let cook for about 5 mins then add tomato.
- Add to boiled pasta / spaghetti. Mix thouroughly.
- If using pasta (you can still do with spaghetti also), put mix in a baking dish then add cheese on top, sprinkle oregano.
If using spaghetti, just mix the cheese in leave to set, then sprinkle oregano. - If placed in dish with cheese on top, put in oven till cheese melts.
